Redclaw harvest yields tasty results, despite drought reducing numbers

Duncan and Judy Fysh think their redclaw crayfish or 'champagne lobster' could beat prawns for taste any day.

The couple own Proa Station, a redclaw farm 75 kilometres south-east of Julia Creek in north-west Queensland.

More than a decade ago the pair set up 12 freshwater ponds, fed by water from the Great Artesian Basin, to diversify their cattle and sheep operation and shield themselves from the variability of livestock prices. Read more....
